Using Wheat:

Sugar free Zucchini Bread

• 2 cups Whole Wheat flour
• 1 cup ground golden flax
• 2 tsp baking powder
• 1tsp backing soda
• ½ tsp salt
• 1tsp nutmeg
• ½ tsp stevia powder( 90% stevinoids)
• 3 eggs
• ½ cup of canola oil
• 12 ox of warm milk.
• 1 cup chopped walnuts (optional)
• 2 cups Zucchini-grated.

Mix all dry ingredients and set aside. In a large mixing bowel beat eggs and oil. Add milk and mix well. Pour dry ingredients and mix well. Add Zucchini half way in mixing and nuts if desired.

Bake at 375-degree temp for 50-70 minutes. Reduce temp by 25 degree if glass dish and increase time by half.

Prune Nut Muffins

3/4 cup whole wheat flour
1 cup white flour
2 teaspoons baking powder
1/4 teaspoon salt
2 tablespoons sugar
1/4 cup soft margarine
1 egg beaten
1 cup milk
3/4 cup pitted, cooked prunes
1/4 cup chopped walnuts


Mix flour, baking powder, sugar, salt. Mix in margarine until fine crumbs are formed. Add egg and milk, mix and fold in prunes and nuts. Pour into greased muffin pnas. Preheat oven to 425 degrees, bake 15-20 minutes.

Drop Doughnuts

3 eggs
1/2 cup sweet cream
1 cup sugar
2 teaspoons baking powder
1 1/2 cups whole wheat flour
2 cups white flour


Drop by teaspoon in deep fryer.

Whole Grain Biscuit Mix

2 cups whole wheat flour
2 cups all purpose flour
1 cup shortening
2 tablespoons baking powder
1/2 cup cornmeal
1/2 cup quick-cooking oats
1 teaspoon salt


In large container, mix dry ingredients, then blend in shortening. For every six biscuits desired, combine 1 cup of biscuit mix and 3/4 cup of milk. Turn out on floured board and knead 1 minute. Roll app. 3/8" thick and cut with biscuit cutter. Bake on ungreased cookie sheet at 450 degrees for 12 minutes. Unused mix can be stored in refrigerator.

Whole Wheat Zucchini Bread

3 eggs
2 teaspoons baking soda
1 cup sugar
1 teaspoon baking powder
1 teaspoon vanilla
1 teaspoon salt
1/3 cup molasses
1 1/2 cups chopped nuts
1 cup oil
2 cups grated zucchini squash
2 1/2 cups whole wheat flour


Beat eggs, add sugar, vanilla molasses, and oil, mix well. Mix dry ingredients together and add to first mixture. Mix well, then add nuts and zucchini. Bake at 350 degrees for 40 to 50 minutes. Cool for 10 minutes, then turn out. Use 2 greased and floured pans.

Applesauce Cake

1 1/4 cups all purpose flour
1 1/4 cups whole wheat flour
1 2/3 cups sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1/4 teaspoon baking powder
3/4 teaspoon ground cinammon
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1 1/2 cups applesauce
1/2 cup water
1/2 cup shortening
2 eggs
1/2 cup chopped walnuts


Heat oven to 350 degrees. Grease and flour rectangular baking pan. Beat all ingredients in large mixing bowl on low speed, scraping bowl constantly until well blended. Beat on high speed, scraping bowl. Pour into pan and bake for 25 to 30 minutes.

Ham Salad

1 head lettuce, chopped
1/4 chopped onion
2 cups ham chopped
1 cup wheat sprouts, chopped
1 cup cooked wheat
1 cup salad dressing


Mix all ingredients, serve chilled.

Spinach Salad

1 pound fresh spinach
2 cups wheat sprouts
1 cup water chestnuts, sliced
4 hard-cooked eggs, sliced
1/4 cup green onions, sliced
1/2 pound bacon, fried, diced
1 cup fresh mushrooms, sliced


Wash and cut spinach into bite sized pieces. Rinse and drain sprouts. Mix all ingredients.

Chef's Salads

1/2 head lettuce
1 large tomato cut into eighths
1 small onion, sliced
1/2 cucumber, thinly sliced
1/2 green pepper cut into thin strips
1/4 cup wheat sprouts
1/2 cup chopped cooked ham
1/4 cup strips of mozzarella cheese
1/2 cup strips of chicken or turkey


Wash lettuce, cut into bite-size pieces. Arrange all of the ingredients in a salad bowl.

Wheat Tossed Salad

1 head lettuce
1 large tomato cut into eighths
3 green onions (optional)
1 cup cooked wheat
1/4 cup wheat sprouts
4 radishes, sliced
1/4 cup cheese, sliced
1/2 cup cooked beef


Wash lettuce, cut into bite-size pieces. Arrange all of the ingredients in a salad bowl.

Wheat Tacos

1 pound lean ground beef or pork
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup cooked wheat
1 8-ounce can tomato sauce
1/4 cayenne pepper
1/2 teaspoon chili powder
2 cups wheat sprouts


In 2-quart glass bowl break up ground beef in small chunks. Add onion, green pepper. Cover, microwave at high 4 to 5 minutes, and drain. Add tomato sauce, cayenne pepper, and chili powder. Cover and microwave at high 4 to 5 minutes. Use meat to fill prebaked, or packaged taco shells, filling about half full. Top tacos with wheat sprouts and cheese.

Plain Pancakes

1 teaspoon sugar
1 teaspoon salt
1 tablespoon shortening
2 eggs
2 cups milk
2 cups whole wheat flour
3 teaspoons baking powder


Mix ingredients in a bowl. Bake on a hot griddle.

Blender Pancakes

Place in blender:
3/4 cup whole wheat berries
1 cup milk

Blend for 4-5 minutes. After blending, add:
2 eggs
1/4 cup oil
3/4 teaspoon baking soda
2 tablespoons honey
2 tablespoons baking powder


Blend for a few seconds and pour on a lightly oiled griddle.

Dog Biscuits

3/4 cup hot water
1/3 cup margarine or lard
4 beef flavor boullion cubes
1/2 cup powdered milk
1 egg beaten
3 cups whole wheat flour


In a large bowl pour hot water and boullion cubes, mix well. Add powdered milk, margarine, or lard, mix again. Add egg and whole wheat flour, then knead for 10 minutes. Roll to 1/2" thick, then cut into hot dog shapes. Place on a greased baking sheet and bake for 45 to 55 minutes at 325 degrees. Leave uncovered for 2 hours or until dried out.

Cheese Dog Biscuits

1 cup uncooked oatmeal
1/4 cup margarine or lard
1 1/2 cups hot water
1/2 cup powdered milk
1 cup grated cheese or 1 box of macaroni and cheese
1 egg beaten
1 cup cornmeal
4 cups whole wheat flour


In a large bowl add oatmeal and hot water. Mix in powdered milk and cheese or macaroni and cheese, mix well. Add egg and cornmeal, and flour. Knead for 10 minutes, roll to 1/2 inch thick, then cut into hot dog shapes. Place on a greased baking sheet and bake for 1 hour at 300 degrees. Leave uncovered for 2 hours or until dry.
